Most of these are fairly easy and require 20 minutes of preparation and then the rest is oven cook time. Author generally uses a frugal vegetable ingredients mixed with a few bougie flavoring ingredients. Many are easily substituted if you don't want to purchase a fancy ingredient. Recipes I've made so far: Oven Baked shakshuka -excellent Carrot tarte tatin -excellent Butter roasted harissa leeks and beetroot with Bulger and feta-excellect Crunchy roast potato artichoke and spring green hash with baked eggs- excellent Lux warm winter salad roasted potatoes and celeriac with truffle and soft boiled eggs-good Herb roasted onions with cherry tomatoes and cannellini beans- excellent Rich potato and mushroom gratin-5 star excellent All in one pearl barley with squash pomegranate watercress and feta-goof Crisp cauliflower steaks with harissa and goats cheese -5 star excellent Store cupboard pasta bake crispy red pepper and cannellini beans with blue cheese-good Spiced leek and mushroom tart- excellent Gently sliced pearl barley with tomatoes leeks dill and pine nuts-good Gado gado indonesian salad-good Crispy gnocchi with mushrooms squash and sage- leftovers were meh 2nd day. Miso aubergines with tofu seasoned and chili- unpleasant Roasted tomato, red pepper and artichoke panzella- excellent Quick Thai okra with oyster mushrooms and coconut milk- excellent All in one roasted tomato and bay orzo- excellent - I've made this 5 times The only recipe we have not liked was the miso aubergines with tofu and seasoned chilli. We like all of the individual ingredients. However I think our miso paste was very dehydrated, so probably overly concentrated. The resulting dish was overly salty and pretty gross. So there may be user error on our parts here. Most recipes have been good to excellent. I serve them with either a side of bread or green salad. Each recipe serves 2-4 people. I like that the author is open about substitutions. I like that there are leftovers for lunch the next day. Most things are easily substituted or swapped. Flavors have been good. I would generally use more spices and acids then what the author suggests, but we enjoy very strongly flavored foods. The spices and flavors are easily doubled to our preferences. I've cooked dinner with this book for three weeks straight. It's been easy. I do cook with a kitchen scale set to grams. The author is British, so all of the recipes are in metric. If I feel like it, I'll pencil in the conversions to imperial measurements in the margins. While the food cooks, I generally clean the kitchen and do dishes and other house chores. This book gives me more time at night to do other things. Very useful for weeknight meals. Will definitely be keeping this in the rotation. The author has a section in the center of the book that gives some options for creating your own tarts and gratins, tagines, curries, and stews, warm salads, and grain-based dishes, which is so helpful when you have a mix of random products in the fridge and want some ideas for how to put them together. I am going to explore her other cookbooks.

Great, Tasty, One Pan Vegetarian and Vegan Meals
Bought this as a gift - I already own it myself. I live out of this book. With a little bit of planning ahead with shopping it makes work night meals really easy and the portion sizes (for us) are spot on.

The best cookbook I've ever bought!
Bought this on a recommendation from a friend and it did not disappoint. Every recipe I've tried has been delicious, even the ones I've not been too sure about before cooking. It's taught me how to be more adventurous with my own cooking, I now think nothing of knocking up a roasting tin with whatever's in the fridge using the techniques and ingredient pairings seen in the book. I'm eating healthier and recommend it to everyone!

Recipes are easy to prepare.
This book was a gift to my daughter who really does not like cooking. She cooked from this book for 3 consecutive evenings. I suppose her family loves it more more than she!!

Great for both adventurous and picky eaters
We’re trying to incorporate more veggies into our meals, and less meat, and this cookbook has helped so much! My husband and daughters aren’t very adventurous eaters, whereas I am, and we’ve all enjoyed the recipes. Highly recommend!

Wow! If you love one pan delicious, healthy meals like me, you will LOVE this book and the rest of them in the range. It's genius! The recipes are exceptionally straight forward and include a wide range of vegetables, herbs and spices. All cooked in the oven and ready in half an hour or thereabouts. There is so much flavour and variety to be had. It has even given me confidence to produce some fab meals with store cupboard/fridge ingredients. This has been a massive hit with our family too. It's GENIUS!

Great book to be using regularly. Just so easy to throw everything in the roasting tin; go off and do something else, and then have a hot dinner ready. The recipies I have tried are really tasty, and this book will come in very useful on a daily basis. I am delighted to have this book in my vegan collection, and most of the vegetarian recipies can also easily be made vegan by missing out cheese or cream for example or using vegan substitutes. Fantastic book, I love it!!

I rarely write reviews, but this book deserves a mention. It’s the most used cook book in my kitchen, stocked full of delicious recipes and ideas for simple wholesome meals. I highly recommend this book for everyone wanting to eat a more healthy, plant based diet.

There is nothing particularly 'new' in this recipe book but the easy to follow combinations of veg + spice have delivered really fantastic weeknight meals. We are transitioning into a more veggie based diet & this book is making that transition fun & easy. I love the 30 minute tray bakes!

We are trying to eat less meat so we’re looking of easy yet yummy ways to cook differently. The book is perfect for us as it has creative, healthy and easy-to-prep vegan and vegetarian very yummy recipes! All are prepared in little time, a great saver on your budget (veggies are less expensive than meat!), just take a while in the oven (you can use that time for other things!). The photos are great, too.
