They've been making cordials here for nearly 30 years, pressing fresh fruit and infusing flowers to mix with the famous Belvoir spring water. Renowned for their elderflower drinks, they still use the same elderflower recipe developed by co-founder Mary Manners all those years ago. Originally, all the elderflowers were handpicked from bushes growing around Lord and Lady John Manners' garden. The whole family helped to make the first batch of elderflower cordial, chopping the lemons and stirring the syrup. Lord John then popped the 88 cases of drinks into the back of his car and went round local farm shops, persuading the owners to buy a bottle here and there. Today, demand is so high that Belvoir calls on the local community to help with the harvest, picking flowers from their own orchards and from hedgerows in the surrounding countryside. To achieve the unique taste of Belvoir's elderflower products, it's essential to use nothing but fresh flowers. Peverel Manners, Lord John's son, says: "The secret of a really good elderflower cordial is to use masses of flowers that have been picked in the sunshine when they're warm and heavy with yellow pollen, then get them into the vat within three hours. This gives the drink its delicate floral taste." Over the years, the company has expanded its beverage range to include a wide range of flavours and the brand now produces more than 40 products, many of which have won multiple awards. Belvoir Fruit Farms is still owned and run by the Manners family. The Vale of Belvoir Cordials from the Vale of Belvoir On the hill above Belvoir Fruit Farms stands the magnificent Belvoir Castle, with origins dating back to the 13th century. The word 'Belvoir' (pronounced beever in the UK) harks to Norman times when French invaders stood at the top of the hill and said in Old French: "Quel bel voir" - what a beautiful view! The ancestral home of the Dukes of Rutland for the last 500 years, it is where Lord John Manners was brought up as a child. It is still very much a working home and is lived in by the 11th Duke and his family. Periodically it is open to the public and, along with a stunning art collection including works by Holbein, Gainsborough, Reynolds and Poussin, it has a magical woodland garden that is always worth visiting. The Vale of Belvoir is one of England's most fertile agricultural areas and is home to the world famous stilton cheese. The nearby market town of Melton is renowned for its Melton Mowbray pork pies, while the area as a whole abounds with award-winning farm shops selling locally grown produce. Elderflower Folklore Flower Picking for the Community of Belvoir Elders are an ancient hedgerow plant, native to Britain, and loved for their frothy, saucer-sized mass of white flowers and dark, distinctive berries. Steeped in mystery and superstition, they are attributed with many diverse powers and properties.
