Q: how long will this keep?

There is a date on the label, (about a year I got) the times I purchased this item. If you are unsure just mix a 1/2.Tsp.with warm water and 1.Tsp.sugar in a cup, if it froths up in 5-10. mins. it's ok to use. (keep warm while waiting) Hope this info helped you.

Q: How muich wine will it make?

Plenty. Roughly, you can make one liter of wine of one gram of yeast.

Q: Can this be used for baking bread?

Well, I have some albeit a year old but don't see why it won't work. I made some bread with beer yeast a few days ago and it came out nice so don't see why this should not. I see the comments about alcohol but bread yeast will produce alcohol too but this only happens whilst the dough is prooving. Once baking starts all the alcohol evaporates out so it makes no difference what yeast you have used at that point. You might get a different taste than normal but that's the risk and who knows you may prefer it to bread yeast. I would activate 5 - 7g first in say 100ml of water and when it starts to bloom then you can get the ingredients together for a small load to test. Saccharomyces cerevisiae yeast is used for beer, wine and baking so go for it. Only the strain of it is different.
