What is the difference between this set of axle backs and the the ones that state eco boost and v6?

This is the same axle-back system that Roush offers. The tips say "3.7", which is the engine size of the V6, but not the engine size of the EcoBoost engine. The exhaust will still technically fit the EcoBoost.

The sound is fantastic! Not raspy nor too awful loud!

I have put other after market exhaust systems on and these are superior! These are well made, sound excellent (not at all raspy), and very easy to install. This a a perfect fit for the 2017 V6 Mustang. I'm so glad I purchased them.
