I was originally considering buying the much touted but quite expensive ThermaPen MK4 instead, but I decided to take a chance on this less expensive ThermoPro. Both use "thermocouple" technology for measuring temperature (as opposed to thermistor technology), which can produce faster read times and allow for the temperature sensor to be positioned further into the tip of the probe. I especially liked the idea of the sensor being in the tip of the probe, and having the speed and accuracy to be able to read temperature gradients at each layer and area within the food. In any event, the technology details are irrelevant unless it's designed and assembled properly. And I have not been disappointed thus far. The ThermoPro TP19 seems to be able to read the various temperature gradients and seems more than adequate for the purposes of general kitchen use. Read times are usually within a few seconds and after testing the calibration with a specially prepared ice bath (using an insulated container filled at least 70% full with ice and topped up and stirred with cold water and then taking the temperature after letting it sit 10 mins and looking for 0.0 Celsius reading), I also have confidence in the temperature readings. There was some fluctuation when I was taking the ice bath temperature, which amounted to + or - about half a degree celsius depending on where I measured, how long the ice bath had been sitting, and how well stirred the water was , but even if it was out a full degree or two, that is more than enough accuracy for my purposes. The more important factor is speed for me, and the ThermoPro is also adequate on that front. Yes, the ThermaPen MK4 might be faster to give readings (and while I have not tested both side-by-side comparing read times, others online have), but it's also more than double the price (and perhaps 3x the price, especially for Canadians with USD-CAD exchange, shipping, duties, etc). Overall, I think this is good value and will suit most people.
