What is the difference of the ez start vs the regular?

The EZ start has a port that allows water to bypass back to the inlet side of the pumps when pull starting. The non-EZ start will build up pressure when pull starting. If the motor doesn’t start on the first couple of pulls, you will needs to squeeze the trigger gun to relieve the pressure. EZ start eliminates having to do this.

Can you recommend a good pressure gauge to go with this product?

Liquid fill (silicon fluid) at least 1/3 more than your highest pressure for safety due to sudden surge of pressure (loading and unloading of pressure). The bigger view gage the better (4"), 2" ok

Do I need a water holding tank or will it work if I'm hooked up to the lawn hose?

The preferred method is lawn hose, make sure your pump is getting a constant 5GPM input. Water holding tank and gravity feed users should contact their dealer for specifics needed.
