Great Ceylon or “true cinnamon”
First, if you don’t know the difference between ceylon & cassia cinnamon, look it up.Most people are familiar with cassia cinnamon, with it’s sharper, more bold flavor. Most grocery store cinnamon is cassia.Ceylon, sometimes referred to as “true cinnamon,” has a lighter, more floral aroma & flavor. It also has a lower coumarin content, so people that are consuming cinnamon in very large amounts often seek out ceylon cinnamon to avoid too much coumarin exposure, which can be bad for your health.Cassia cinnamon sticks are one layer of thick bark, rolled up & are much harder. Ceylon cinnamon sticks are very thin layers of bark rolled up in lots of layers, and they are much softer & can be easily broken with your hands.I thought I preferred the cassia cinnamon’s bold flavor, but switched to ceylon cinnamon for health reasons. I have since come to really appreciate the more complex, if softer & more subtle, flavors & aromas of the ceylon cinnamon. I have used these sticks in curries & Moroccan lamb dishes, in Indian dishes, in apple cider/wassail, in cinnamon-ginger apple sauce, pear sauce, and cranberry sauces, and have loved the taste. I have not missed the cassia like I was afraid I would.These sticks were long, in good shape, and have imparted great flavor into everything I’ve used then in.And they are clearly authentic ceylon cinnamon. Sometimes people buy ceylon cinnamon in this form, & grind it themselves, to ensure it is 100% ceylon cinnamon they are getting, since it can be hard to know if companies are mixing in cheaper filler cinnamon when buying it in powdered form. I’ve used these sticks in my homemade ras-el-hanout spice mix, and had no problem grinding it in my Vitamix.

Softer, sweeter flavor than cassis.
I bought this for brewing a pumpkin porter, and I don't think I'd had Ceylon cinnamon prior to purchasing these. It is a much softer, almost sweeter taste than the ubiquitous Cassis cinnamon. This cinnamon is almost paper-like, so it can be more difficult to grate using a micro-plane or the like compared to the rock-hard Cassis from the grocery store. I ground what I could from a stick, then used a coffee grinder to grind up the remaining large chunks that flaked off. I don't think I can go back to the grocery-store cassis, and I wouldn't have to anyway since this is such a large bag.

Good service, good snack, only complaints are with Mother Nature.
Pros:Healthier than spice rack (cassia) cinnamon.Lighter flavor than cassia.Makes my poo smell like cookies.Cons:Much larger sticks than cassia, tough to snack on comfortably in the office.Sticks are brittle and tend to flake off.

Do not buy
Absolutely no cinnamon scent. It was like crown sticks and no scent. Would never buy again. Too much to send back, so I trashed them.Very disappointed.

hearty stocks; floral/fruity scent
This is thicker and hardier than my previous order of Ceylon Cinnamon from PowerNutri Shop, which lacked flavor. Indus has a strong floral/fruity scent, but not flavor. Once brewed, I could smell the cinnamon from a few feet away. Interesting. Flavor was mildly sweet and more of what I have read that it should taste like.I took a cinnamon stick and a tablespoon of Stevia and brewed them in a quart jar, strained and then froze in ice cube trays. It is easy, then, to drop an ice cube into my hot tea without having to wait a half hour for the cinnamon to reach full flavor.I am curious about other brands. Suggestions?

These go well with a warmed cup of apple juice.
The apple juice and the cinnamon sticks pair well together. BUT I also make Christmas wreaths from a few packs of these cinnamon sticks, and they make the house smell so fresh. I also give the handmade wreaths to friends as gifts during the Christmas holidays. Never fails to please them and are easy to make.

No cinnamon flavor
I thought that I had gotten a bad batch of cinnamon sticks when I got my order. There was absolutely no cinnamon flavor when I brewed a stick in a cup of hot tea. Then I tried to grind it in my spice grinder and got pieces that wouldn't get any smaller. I had to sift out the bigger pieces to get a very small amount of powder. And still there was no flavor. I called the company and asked about this problem and was told that that is the nature of Ceylon cinnamon .. it's a very mild taste compared to regular cinnamon. I relayed my displeasure with these cinnamon sticks and was graciously sent a packet of their powdered Ceylon cinnamon instead. I didn't have to return the cinnamon sticks, and they are still sitting on my shelf. I do use the powdered cinnamon they sent me, but I have to use more of it to get any flavor. I prefer cinnamomum verum, or true cinnamon, which is sold at my local health food store and which I normally buy.I gave this product 2 stars because it's organic and does come from Ceylon.

Very good for making a tea
Very good for making a tea. I place two sticks in a pot with a few cups of water and bring to a slow boil for 10-15 minutes. The color and flavor deepen as the water cools. Then I place in the fridge and drink it either hot or cold throughout the week. This is much better than the cassia cinnamon.
