Q: What is difference between 20 and 80? I want the essential oils are mixed well in water as you know essential oils can’t be mixed well in water

The higher (i.e 80) the number, the higher chances of skin irritation. The Polysorbate emulsifiers (40, 60 80 and beyond) come in varying strengths but the stronger the product the more chance of skin irritation being a problem for those products used on the skin.

Q: i would like to use it to mix water with oil essential for a diffuser and my question is will the essential oil loose its scent?

It will cut the fragrance just like any other oil but that is what you want to do with the very expensive and strong essential oils. However I would suggest using a different oil like grape seed it’s less expensive and it is what most people use. Polysorbate is to mix your essential oils with water and it may be to thick and ruin your diffuser.

It may polysorbate can be sticky I would recommend using a different oil like grape seed
