NO, This is TRUELY AN ANCIENT WHEAT from Sicily!! Thanks to the work of the Stazione Sperimentale di Granicoltura per la Sicilia — which started in 1927 — the grani antichi di Sicilia (Sicily’s ancient grains) have been rediscovered and catalogued, and important knowledge about their nutritional value and health properties made public: these cereals yield less than common wheat, but they are more nutritious and much richer from an organoleptic point of view. In other words, they are not as profitable, but they are much better for you. Tumminia also called Tumilia is an ancient variety of wheat native to Sicily. It can be traced back to when the ancient Greeks who used to call it trimeniaios and historical sources attest its presence throughout the Middle Ages and the Renaissance. Indeed, tumminia was a very popular wheat variety in the region up to the years before the Second World War. This particular ancient variety was no longer cultivated in the 1950’s because (1) It did not meed the minimum yielding standards to be profitably cultivated in mass (2) It is intolerant to pesticides, insecticides and herbicides. Recent research proved that Tumminia has lower gluten content than common wheat, and that is particularly rich in fibers, vitamins and oligo-elements. A true manna, rich in nutrients and lighter to digest than most other grains. The Slow Food Foundation for Biodiversity tells us that tumminia durum wheat is good for both pasta and bread. It is “extremely fragrant and quite nutritious, and, thanks to the use of sourdough as a natural yeast it lasts for a long time.” Tumminia is also a product at risk of extinction. This is why it is a Slow Food Presidium, an indication that “sustains quality production at risk of extinction, protects unique regions and ecosystems, recovers traditional processing methods, safeguards native breeds and local plant varieties.”

Is this made from 00 flour?

This one is the whole wheat. I have only tried their other version, but unsure if it is 00. (The 00 flour is much finer I believe as I have used it for light pizza crusts.) It tastes delicious though and I highly recommend it. If you are familiar with southern Italian pastas you will like it. It is most similar to fusilli from the Naples area.
