A Primer to Technical Brewing Manuals for Inquisitive Homebrewers
While the book does have its problems with seemingly circular references and excessive typos, I think this is the best, to-the-point distillation of decades of brewing research available. I appreciate the scientific format of citing references to support claims, as you can easily go verify the statements for yourself. While this book does not read like a novel, I think the technical style is well written, clear and concise. You won't find elegant language or long prose; it isn't that kind of brewing or homebrewing book. I would recommend this book to anyone who ever asks the questions "why" or "how" when it comes to brewing. If you are simply looking for a how-to book then this may not be for you. If you want to know the answer to why hop oils isomerize or degrade the way they do, or why brewing water affects brewing or why different enzymes behave the way they do at given temperatures and pH, or how kegging pressure affects the partial pressure of carbon dioxide and carbonic acid (or many other questions like these), then this is your book.Overall, I think this book is an excellent distillation of more advanced (and lengthy) technical brewing books, and I will be recommending this to many of my friends involved in the AHA and BJCP.

Dr Fix is an excellent teacher
I have a chemistry background and this book did an excellent job of explaining in a technical way what biology and chemistry influence good beer making. The book is written at a level that even someone with a basic chemistry background can understand the mechanisms that can introduce off flavors to beer. This book does not explain instruments that are used to test beer so look for another resource to get an explanation of the instruments that are used to measure things like sugar content, alcohol concentration, and other equipment for more specialized analysis while brewing your beer.

Very interesting for those seeking a deeper understanding of brewing science
Great book, well written and researched. The book gives a much more thorough treatment of the chemistry of the process than many other texts on the subject. The book would likely not be of significant utility (they should read How to Brew: Everything You Need To Know To Brew Beer Right The First Time which is a very good practical guide), but for those who seek an deeper understanding of the molecular basis of said noble beverage it is well worth the effort.As a bit of a chemistry nerd, I really enjoyed this book. For those who don't have a chemistry background it may be a little bit overwhelming at times but probably no less interesting.I would like to take issue with the publisher however, as there are several errors in the printed text. Most of these errors are typographical by nature and as innocuous as any such error can be in a published work but for a work which markets itself as a serious study of brewing science it really is important to be reliable. When such errors relate to scientific information they can affect the delivery of information and markedly detract from the reader's overall impression of professionalism and validity.Despite this, I strongly recommend this work as a most thorough and entertaining explanation of brewing science.

The book was in great condition. The product was shipped and received earlier that I anticipated. Overall it was a great experience. The book was chocked full of info for the average beer geek that is trying to take their homebrewing to the next level.

Good technical description
This book is just above the average level for technical discussion, but not so far that you're just reading equations. If you skip the over-complex chemistry you still end up with a pretty understandable text.I've met guys who don't like it, sure, it's not for everyone - you probably need at least a high school chemistry background to really follow it. But it has more than a few pearls of wisdom for anybody who wants to understand brewing at the micro level and apply that understanding to make better beer.

Just short of the mark...
I'm trying to digest this book a bit a time, since it is easy to get overwhelmed by breadth of material covered. Although some reviewers have complained that the author goes into too much technical detail at times, I have the opposite complaint. The book would have to be about four times its size to begin to do justice to the topics presented.Also, in reading some sections (and being a chemist myself), it is pretty clear that Dr. Fix is not a chemist, though he has studied extensively and done an admirable job presenting material outside his field of expertise. I guess what I am saying is that he makes some statements that are not particularly well explained and a few others that just don't make sense.Still, this book is a good addition to the brewing library and will spur the curious reader into delving more deeply into the science behind the brew.

The book to sit down with a cold one and enjoy both!
For chemistry geeks who love beer, this is a great book, highly recommended. I bought the updated Kindle version and I also bought a vintage paperback copy for my son-in-law, a craft brewer, and he really is enjoying our conversations regarding the subjects the science of beer. I also find it interesting from my sourdough bread making aspect too. Well written, knowledgeable. and it should be on any home brewers shelf.

Great for scientific knowledge; not really for practical use.
I am loving this book, but if you aren't wanting to hear the deep, scientific reason why everything does what it does, then this book is not for you. It is fascinating and gives a very detailed look at the molecules that make up all of the components in brewing. It is not a practical guide to brewing, which is what some of the negative reviews were hoping they were buying. I love science, so this book is right up my alley.

libro consigliatissimo a chi vuole veramente capire cosa c'è dietro ai comuni processi della burrificazione, richiede basi di biochimica per essere compreso nella sua totalità. Comunque un libro per chi vuole andare oltre i soliti testi ed approfondire la propria conoscenza.

Very complete book! For someone with a scientific background who wants to undersrand what's happening when he's brewing, understand why there is this taste this time and how to reproduce it or to avoid this. I loved it!

The Science of Brewing
This is an excellent publication for the amatur or developing brewmaster, the science of brewing is clearly and methodically laid out in an easy to understand style with just the right level of language and terminology to make it readable. Fix is a master brewer and capable teacher who easily imparts his vast knowledge leaving the reader eager to read more and expand their knowledge base.Great read, great tool for the brewer.
