Yes, 2 packets are in each box - the calcium packet and the pectin packet.....

Can this pectin be used for freezer jam?

Yes it can. On the pamphlet that comes with the pectin, there is a section for freezer jam.

Is there an expiration date on this product? Just wondering if I bought multiple boxes if they would go bad before I had a chance to use them.

How many teaspoons in 1oz. Packet?

According to Pomona's: "The larger, thicker packet is tan-colored pectin powder. This packet contains 9 teaspoons of pectin on average but this average may not be exact for your packet. The smaller, thinner packet is white monocalcium phosphate powder. This packet contains at least 1/2 teaspoon of calcium but it could contain more."
