Q: How the hell do you remove the plates?!!!

You grasp the handles in one hand and grip the top (or bottom) arm by the grooved sides on the outer casing and pull as hard as you can to remove the upper casing, which releases the plate. Change the plate to the one you want and then reverse the process. Do that for both 'arms' with corresponding pairs of plates. The securing casing on each 'arm' is really stiff - I had to use a rubber grip to hold it that I usually use to open jar lids but it does mean that the unit is very secure and not rattly. There is a short video with the photographs on the listing for the item which is spot on!
