Just the perfect knife for a variety of roles
Bought because it had none of the 1 and 2 star reviews for poor quality of all other knives viewed as I was specifically looking for a knife to cut sourdough loaves. The blade is thin but strong, serrated and firmly fixed in its handle. So far I've used it successfully to cut sourdough (very hard crusts) fresh baked French sticks (with no tearing) fresh baked wholemeal loaves (thin, accurate slices possible) cold meats on non-metallic board and tomatoes (very thin slices possible) altogether the perfect knife!

Great bread knife. Sourdough stands no chance with this thing.

Sharp and comfortable to hold.
Very pleased with this knife. I bought this to replace my Zwilling bread knife which I had for many years but was too short for wide loaves and had become blunt. This Victorinox knife is comfortable to hold and not too heavy but plenty long enough for cob loaves. Sliced firm sourgh dough loaf very easily and straight through the tough lower crust. Just what I was after and great that they offer different length blades. I was also keen to get a round tipped knife which I feel is safer and less likely to cut up the bread board.

Perfect
This knife is perfect, I don't even know where to start: it cuts through bread, veggies, and frozen goods like it doesn't even care. The grip is comfortable, it does not slip even when wet; and it is not as serrated as other bread knives, that means a simple honing knife can fix damages heavy use cause to the blade (chipped point for example). I love it, it even manages to skin fish without leaving marks. Not that you should use it that way, but I was curious to see if would work. With this, a chef knife, honing steel, and a utility/pairing knife, you can basically get through most of the worls in a busy kitchen.

Really well balanced bread knife
Got this to replace my Mercer bread knife, which is just too wide and angled harshly to the left. The thinner straighter blade of this Victorinox pastry knife has me cutting dead straight bread slices with no crumbs everywhere. Technique still matters - I found Bake with Jack how to slice bread useful - and knife matters a LOT.

Cette scie à pain est excellente : coupe parfaitement, lame rigide et, surtout, lame légèrement courbe. Cette courbure permet de couper facilement toute la tranche pain, même au centre lorsque vous planche à pain devient légèrement creuse, suite à son usure due à l'usage.
