Brilliant if a little on the expensive side
Well as a keen cook I love sharp knives but was fed up asking my butcher to put the edge back on them. A 'steel' would keep them sharp for some time but eventually they still needed to be sharpened again. I have to admit they had become very blunt and I could have sat on them without too much concern, so I expected the sharpener to have its work cut out. It says only to use the left hand option for really blunt knives which mine were so I used this for 6 times either side, then went to the middle option and did 6 times on either side and finally the right hand side and put it through 3 times either side. I was very pleasantly surprised at how sharp they had become. Where they as good as new, no, but they were very sharp and I probably think it was the operator not the machine at fault! Practise make perfect as they say. Not cheap but it is a pleasure to have my 'new' knives back. Lastly the machine does make some noise and after the first time I wondered if there would be any metal left but I could see no difference so its bark must be worse than its bite!!

13 years on, still going strong!
I bought this as a gift for my father at his request, but have to confess I have also used it constantly myself every time my knives have needed sharpening over the last 13 years. My brother has also used and as he has decided to buy his own, I thought it probably deserved a review. It's still going strong after all this time, doing an excellent job having sharpened 3 sets of family knives repeatedly over all this time.It's very easy to use and also comes with clear instructions. I hadn't used one before and didn't have any difficulty. My knives always look smooth afterwards and more importantly, they are beautifully sharp. There is a newer model of this now and I don't know how it compares for price, but I would buy this model again without hesitation.

Does the job, well enough!
After several complaints that our growing selection of kitchen knives were not sharp enough I decided to order a whetstone. Whilst am sure they work after 20 minutes on knife 1 and seeing another 15 to go, I decided it was the wrong choice. My father has a sharpener by Chef’s Choice and is happy with it so I ordered one too. It certainly is much quicker than a stone and simple to use, but also costs 8-9 times more so it should be. I would give it 5 stars if it weren’t for the over optimistic instruction booklet that claims once through section 2 and once through section 3 does the trick. It doesn’t (if it does it probably means your knives didn’t need sharpening), 3-4 times through each one and you start to get an acceptable result. This then leads me to wonder how long the sharpening wheels will last and how easy they are to buy and fit. Some other reviews suggest not so easy. Good for now, time will tell as with anything. Oh, one last thing. I had to return the first one as it came with a European plug. Thankfully the second one came with a UK plug.

Does What It Says On The Box
Yes, it is good.It is a slight exaggeration that a couple of passes of any knife make a magical razor edge. I suspect that even a fairly sharp knife needs to be ground to the angles that this machine uses. Once it is, then it takes very little effort to sharpen and keep it sharp.I use carbon-steel knives. It's a fad: there is no real reason to these days, but I'm not throwing away the old to buy new stainless! Carbon steel takes a great edge, but looses it quickly. One thing I've noticed, having had this machine for a few weeks now, and used it a few times on my most used knives (just a couple get 90% of the use) is that the edge lasts much longer. I'm used to touching up carbon steel knives, routine, before every use, even if they have only seen a tomato or two the last time. Once this machine has done its work a few times, that is not necessary. So perhaps it is magic: just give it time.It is crazy-ridiculous to sharpen kitchen knives so they will shave hairs off your arm, but if you are into that particle bit of [dangerous] sharp-knife showmanship, this machine will not disappoint. Superb Sharpener that keeps your blades razor sharp
I have owned this superb sharpener for nearly 2 years. I have no complaints.I bought this in desperation because all of my knives were blunt and I couldn't face buying another ineffective sharpener . I wanted something that worked and, ideally, was electric to make sharpening effortless.I used the Chef's Choice Edge select Model 120 on all 12 of my kitchen knives as soon as it arrived. I even read the easy to follow instructions. This is the only time I have needed to use the coarse grinding wheel. A few minutes work was all that it took to turn a blunt blade into razor sharp one that I could shave with (I'm not brave enough). It's easy and safe enought for my 13 year old daughter to use.Since that first amazing day, I have kept each knife in top condition by quickly running each blade through the machine just before I use it. The sharpener has worked pefectly with with everything that I own: from cheap pen knives to expensive German-engineered stainless steel kitchen cleavers.Expensive but worth it.

Simply brilliant!
I have must have spent hundreds of hours and hundreds of pounds on whetstones, steels, manual sharpeners and only managed to make my knives progressively more blunt. This has all changed since I bought this knife sharpener and I now have a set of super sharp knives which pass the critical tomato test and are probably sharp enough to shave with. As long as you stick to the instructions, it's easy and quick to use with immediate and startling results. Thoroughly recommended despite the lumpy price tag.

Best knife sharpener
I regret not buying this sharpener 5 years ago. after trying many other knife sharpeners I can confirm that it is the best on that price.knife super sharp and super fast. I have manage to do a paper test on all my cooking knife with no problems .... perhaps I did not need the stage 1 so if your budget is less than that perhaps consider the one with 2 stages only

Knifes are sharp but not as sharp as I hoped !
Not sure if it’s me but certainly does not get knifes as sharp as the make out ! Maybe through time I will get it , time will tell !
