They’re the vanilla of the fungus world—inoffensive, versatile, and always lurking in the fridge behind the yoghurt. But give them a bit of butter, garlic, and heat, and they transform from bland buttons into sizzling flavour sponges. Chuck them in a fry-up, pasta, or stir-fry and pretend you’re on MasterChef—even if you’re actually in a dressing gown eating straight from the pan. They’re pre-washed, or at least convincingly pretending to be, and firm enough to survive a rough ride home with the rest of your online shop (even when your quinoa’s tried to escape its bag again).
