Makes Excellent 100% Whole Wheat Bread
This Fairhavem Mill flour makes excellent, nutty, 100% whole wheat bread when mixed with a tablespoon or two of vital wheat gluten for a better rise. (Whole wheat flour doesn't contain as much gluten as white flour and therefore by itself doesn't rise as well.) It is made from hard red wheat, the typical grain for what most of us know as "whole wheat." Because it is finely milled, it hydrates fully and quickly.I love that the producer has included both the mill date and the best-by date. I often mill my own hard red wheat flour, so I know what fresh flour tastes like. While this cannot compare to same-day flour, it certainly tastes more fresh than some that I've bought from the grocery store. Since whole wheat flour tends to go rancid, it's imperative that you start with fresh flour and store it properly. My sack of flour was milled a couple of months ago, with a best-by date of a year from now. While that seems a little generous in terms of time, you can meet that best-by goal by refrigerating or freezing the flour. I transferred my flour to an airtight container for storage because I don't want it to pick up refrigerator/freezer smells or spill. Although I use a lot of wheat flour, I still want to slow the aging process.I love that Fairhaven Mills uses organic wheat. Since I bake 99% of the bread we consume in my household, I want to start with the best. Short of milling the flour myself, this is a fantastic option.-- Debbie Lee Wesselmann
