Takes a very sharp edge, well made, durable, a bargain
While the factory edge was adequate, on arrival I had the knife polished at five grits up to 5000, and the steel was flexible enough to retain the very fine polished edge, a sign of good steel. An excellent, basic knife capable of anything it's suited for.

What a beautiful knife, a working piece of art!
I first started with a cheap Japanese single edge sushi knife but it was without the concave shape on the plain side of the blade. A properly made yanagiba makes all the difference when slicing, the meat slides off regardless of how thin you slice, perfect for sashimi because of that concave shape on the plain side of the blade. The build quality is exceptional! I could have purchased a Chinese made yanagiba but since everything else in my home sushi making endeavor is made in Japan I figured I'd stick with Japanese made. You won't regret this purchase, as soon as you handle the knife you can feel the quality! Does not include a saya but I can get one here for this size knife! I 100% recommend this knife to anyone looking to up their sushi/sashimi cutting skills!
