The best advice on making vinegar that I've ever read
If you love all kinds of vinegars and your pantry shelves give testament to it; if you cook with vinegar--using it as often or more often than lemon, and/or if you love to conjure when you cook, this book might very well be a "must" buy for you.House Of Vinegar provides a huge, strong platform for jumping off into your own conjuring cooking world--one that includes an endless variety of vinegars to be used as flavor enhancers. You will be making as large a variety of vinegars as your imagination allows.If you have a bottle of something alcoholic in the 6 to 12 percent ABV (alcohol by volume) range, you can probably start making vinegar the day you get this book. If that idea teases you, I think this book is for you. The few supplies needed are probably sitting on your kitchen shelves.In this book, you will learn that making vinegar is easy. And if you've tried making a batch of vinegar before--and it failed, you will learn very quickly in this book just why it failed. That is how thorough author Jonathon Sawyer is. He shows the reader that making vinegar can be a basic unpretentious task, if one is willing to follow some uncomplicated and straightforward rules. He also demonstrates how to make artless, but great-tasting, vinegars or to conjure up complex flavors that can provide you with the "secret ingredient" you are looking for.Regarding the recipes in this book: Do not overlook the fact that the words "with recipes" is in small print on the cover of this book. I found the recipes to be interesting, but were not nearly as important as the "how to" and the "why" of all things vinegar. Except for the recipes that actually make vinegar, the other recipes have not turned out to be favorites of mine. BUT, all those other recipes that have vinegar in the ingredient list, (sometimes just a tablespoon), are extremely important as part of the learning process of how to use vinegar in your cooking. And all the recipes definitely do provide food for thought, and they also provide a huge, strong platform for jumping off into your own conjuring cooking world.Writing style of the author is very personable and fun, although the book could have used a more sophisticated hand in editing. Page layout and type style and size is easy on the eyes. Pictures are good-quality and plentiful.It is a book that should be getting more attention. I am very glad to have run across it, and I think it's a great addition to my kitchen library shelves. I have gained a lot of information from this book, and I know I will continue to do so as I go back to it often.

Great tips and recipes.
This is a great reference book. Lots of tips for making various vinegar flavors based on author’s experience. Can help you to avoid mistakes before wasting ingredients.The recipes are great for showing you how vinegar can be used in cooking.I gave it 4 stars because I wished there were more recipes for making various vinegars.

at turns witty, philosophical, and deeply informative.....but always enjoyable. house of vinegar is a book you'll want to keep in your kitchen at all times for inspiration. great photos keep the pages turning. and a bounty of recipes and sage advice pull it all together in a beautiful and elegant package.

Inspiring
I bought this as a christmas gift for someone else. I stood in their kitchen reading it from cover to cover one night and I'm hooked. They've got a few batches of vinegar started, and I'm so excited to see what comes of this. Plus, huge fan of the Greenhouse Tavern (the chicken wings confit would absolutely be a part of my last meal lol).
