Alcohol evaporates faster than water, so if you like the flavor of a wine or spirit, heat it slowly, uncovered. DO NOT BOIL; that would be a fire hazard with spirits. Hi there, McCormick extracts were reformulated in November, 2010. The new formula removes corn syrup while keeping rich McCormick flavor. There is no corn syrup in McCormick Pure Vanilla. ~ Erica
