Is the palm rest removable?

No the palm rest is not removable.

How quiet are the keys? I'm researching keyboards for a testing center. People regularly complain about the keyboard noise in there.

I don't have a noise level for you but it was one of the quietest keyboards I've had. I had one that lasted from 2010 to 2017. The one I replaced it with seemed to be exactly liked the one I replaced but the space bar didn't work unless I hit it dead center. I tried taking the space bar off the old one and using it but it didn't help. I finally put a piece of plastic in the center and it worked for about a month. I gave up and now have another keyboard that is no where near as quiet but at least all of the keys work.

is this mac compatible

Yes it works with Mac. I have been using the keyboard with various PCs and Macs. My current MacBook Pro 2019 running Big Sur works just fine. You do have to switch the key assignment as D. Caruso also commented. It's a great keyboard and definitely recommend.

About the -FEEL- of the keyboard: When typing do the keys have a -mechanical- click over FEEL?

Oh it most definitely does. Think of it as a modern equivalent to the original IBM PS/2 keyboard. It feels like a bigger, more high quality version of the one on a Dell Latitude D630
