Does this come with a sheath? It is not listed anywhere in the description.

It should come with a leather and wood sheath that has a Sam Brown stud on the removable frog. It's basically an old-school, retro-style sheath.

Why do I see this listed some places as "1055" and others "1085"?

It is 1085 now per Cold Steel. Earlier version was apparently 1055.

How do you remove the blueing?

I personally like the blueing to protect the steel, but if you are set on removing it, naval jelly or vinegar may do what you want. https://m1-garand-rifle.com/debluing/

So does it come sharp, or not really? From reading it seems to be a crap shoot, but looking for a good bowie

It came with a serviceable secondary bevel, meaning... not really sharp, but with some minor sharpening skills you can touch up the edge and get it really sharp. I would not say that it comes "sharp" to my standards.
