## Description

A balanced and harmonious monovarietal extra virgin olive oil produced from 100% Changlot Real olives native to Valencia. The "Special Selection" oil is the only monovarietal olive oil available in the United States made from these exclusive Changlot Real olives which grow only on the Masía el Altet estate. The unique qualities of this land have helped make the olive oils of this family-run company a favorite of chefs around the world.
The aroma is wonderfully herbaceous with notes of freshly-cut grass, fennel, citrus fruits and green banana with hints of green almond and tomato. With its complex and balanced flavor, this oil will complement a wide range of dishes from sautéed fish and broiled meats to green salads and soups.
The land where Masía el Altet grows their olives deserves much of the accolades for the quality of the oil. Their unique olive varieties also produce flavors that help elevate both the blends and brand itself. However, without the passion and dedication of Jorge Petit and his son Jorge, the oils the olives produce would not be the same. As he says, “it is still a cultivated species that requires human intervention in order to bring out the best in itself, and in a great show of generosity, to deliver its finest fruit.” Jorge and his family live on the farm and each day they visit the trees to observe their evolution and return the love and generosity the trees have given them.
