It doesn’t weigh your baked goods down or make them heavy and grainy. I use it to replace all-purpose flour in waffles, cookies, cake, bread and more. It’s a great way to make baked goods healthier without tasting like whole wheat. Since I accidentally used it to make a sponge cake and it turned out great, I never bought white all purpose flour again.

I add this kind of flour in small amounts to a lot of conventional recipes to include more whole grains without altering taste/texture too much. It works. It's more noticeable in some things than others, but for quick breads especially, it's a great option.
