How long does this cheese stay good for in the refrigerator?

I have mine in the coldest spot in the refrigerator (except the freezer) and it appears to be in good shape after 3 months.

Is this a soft cheese?

Yes, it's soft, with a texture much like feta but not a s salty and so much more flavorful and creamy. I love it. It's my favorite cheese. There is so much you can do with it. Use it with salads, pasta. sandwiches or just for a snack.

I think it's sheep's milk. Goat cheese has a much stronger flavor. This cheese is mild but full of flavor.
