Yes, using mavlink it can certainly communicate with a Raspberry Pi over a serial connection.

does take the full pixhawk firmware or only the 1 MB version?

It is 2MB version. and can flash firmware in mission planner.

I have multiple pc' running windows 10 and cannot see this connect on either of them. Any ideas?

This is Pixhawk flight control and need driver. If not driver cannot see com port. You can download "mission planner" and it have driver itself. Thanks! https://ardupilot.org/planner/docs/mission-planner-installation.html
