We have a door that connects our kitchen to our son’s bedroom (live in nyc) and need to block sound. how effective would this be?

It would be so-so, you probably wouldn't be really happy.  You would probably be better off getting a solid wood exterior door (with lots of mass) and finding acoustic door seals for all of the edges.  Sound is airborne vibration - it'll refract around any air gap, so even cracks around a door and under the bottom will let sound through - and a big thin door is a good vibration receiver.  A heavy door is harder for airborne vibrations to shake (couple).  On the non-kitchen side of the door, a 1/4"-1/2" melamine foam (https://www.amazon.com/48-Melamine-Foam-Insulation-Sheet/dp/B0086GRSDM/) glued (https://www.amazon.com/3M-74-Spray-Adhesive-Clear/dp/B000WSH5EO/) to the door, and then a limp-mass (like a loaded vynil: https://www.amazon.com/Noise-Grabber-Mass-Loaded-Vinyl/dp/B07YSQL2RN/) glued to the foam (https://www.amazon.com/3M-Rubber-Adhesive-Aerosol-Weight/dp/B000WS9N2G/) on the bedroom side, and then upholstered to match the room's decor so that the vinyl doesn't get pulled too tight so as to compress the foam, will ensure that any vibration in the door will not be retransmitted into the room.  Keep in mind this makes for a very heavy door, so your hinges and frame need to be up to the task.

What is the actual weight of the panel itself? hard to believe that each panel could weigh 1.9 lbs. want to use for sound insulation in a baot.
