I just pulled one out of the freezer after a year. I keep the one I'm currently using in my refrigerator. As long as your water is warm (110-115 degrees F) and you add a 1/2 teaspoon sugar or maple syrup, then cover it for 5 minutes to bloom, it still works (also called sponge).

What is the expiration date?

I don’t worry about expiration dates if it is stored in the freezer or tefrigerator.
