I tried paleo wraps and they didn't hold food nicely they didn't stretch like spring rolls made with rice paper do these wrappers stretch at all ?

They do not stretch. They work really well for sushi rolls. In order to get them to stick, you have to run a line of water where you want the edges to meet each other.

Are these large or small?

it’s large but narrower than the usual sushi wrapper

Can these be used to make dumplings

I don’t think so, I am not sure you would be able to make them stick to themselves.

Can these be used for sandwich wraps?

These are very thin, but if you are careful, you could use these to wrap sandwiches.
