Q: My white chips got melted during shipment into big chunks. Whats the best way to chop them up and reuse them?

Use a bread slicer to cut the chocolate. Either a straight or rounded one works really well. Put the chocolate on a cutting surface and rock the knife edge through it a bit at a time: rest the non handled point on the surface, push the chocolate up under the blade and rock. I was a pastry chef and i used to cut through 12 lb blocks on a regular basis. It seems like it is a lot of work but it isn't. You determine how big the chunk size you want. I use to sliver it so it would melt faster.

Q: What temps are used to temper this white chocolate

I have no idea I just break it into peices and eat it. Sorry I don’t use it to bake just eat.

Q: This chocolate is W2 or CW2 recipe?

I got CW2 but thought I was getting W2. Disappointed because they have different fluidity.
