With what would you mix this (vodka? gin?) to approximate a Campari Soda ?

Just add soda & it’s basically a NA campari soda. If you wanted to add alcohol, you may as well buy campari. The closest non campari approximation would be adding about 1oz neutral vodka.

Can this be used instead of Campari for making a Negroni?

Short answer is yes. Non alcoholic, carbonated, and 3.3oz. Can be a bit expensive @over $2 each. I'll have it with lime and a nice gin or just cold. For alcoholic beverages could just use campari/aperol and seltzer. I like it because it reminds me of a cafe I used to go to.
