Are these strong enough to hold a magnetic knife strip to a wall?

I would suggest they aren't the right product for this purpose. They may hold the magnetic strip but it wouldn't be flush to the wall due to the strips and then adding the weight of a full set of knives, I'd be more worried about the potential safety issues. I'd recommend screwing your knife strip to the wall instead.

How do these work i cant Figure it out from the instructions its difficult

Ok quite straightforward. Select the number of strips required for the size and weight of the frame/canvas whatever's being hung on the wall. Stick them together in pairs with the velcro like bits, on the outside will be the peel able parts. Take one of these pairs that are stuck together remove the peel able part from one side and attach to the frame. I found sticking them on the sides better not top or bottom. Make sure the rounded end is at the bottom as you have to use this bit if you ever take the picture off the wall. So you should have picture with hanging strips attached to the sides, remove the outer peel able parts and the sticky part is now exposed. Simply press firmly in place on the wall making sure it's straight before you press it down. That's it done.

do they stick to fabric ?

Yes but I guess it will depend on what you have in mind. I've used these to secure my daughter's bedroom curtains to the wall - blocking out any rays of light first thing in the morning, which has held for about 2 years now.

Can you use them to hold a 60cm clock?

It's not easy to advise on this question as it would depend on the weight of the clock more than the size. I would suggest you get the weight and then check the packaging for the best size to buy. They work very well, I have hung pictures and IKEA "wavy" style mirrors without any problems.
