Judges swooned over the "staggering complexity" of this paste, produced using 100% Sicilian pistachios. Boasting a wonderful olive-green colour, natural minerality, and serious depth of flavour, it has inspired numerous uses in sweet and savoury dishes, from ice cream toppings to rubbing on lamb or wood-fired scallops. Made from 100% tree-ripened and hand-harvested Sicilian pistachios which are known as the "volcanic" pistachios as they are produced in the area around Mount Etna. They are slightly longer and thinner than other varieties from other parts of the world. They have an intense aroma and a stronger and sharper taste, partly due to the volcanic soil from where they are grown.. Storage Store in a cool dry place away from direct sunlight. Once opened, consume within 3 months. Some separation is natural. Simply stir before use.
