**Q: Will this work to keep pickels crunchy when canning? Their is a dry form of this calcium chloride you can add to your pickles, but it is expensive...**
A: Thanks so much for asking. Yes, you could use this for canning. Just be aware that it is a liquid solution rather than the dry form. It has a concentration of about 30-32%. Therefore, you would need to add a significant volume of liquid to equal the calcium chloride content of the dry powder or pellets. This will also be adding proportion of water to your canning liquid which will change the qualities of your canning liquid such as acidity or flavor balance. Therefore, just be aware of the other factors involved and the adjustments you have to make if you are going to make the substitution. Thanks!

**Q: Do you use full fat milk or 2% for cheese making? Wonder if it works with skim milk too?**
A: yes works fine with skim mile

**Q: What is the percentage of calcium chloride in the product?**
A: This product contains 32% Calcium Chloride

**Q: How many degrees does the milk have to be to add calcium chloride?**
A: Not too hot, not too cold, .. just right!  Calcium addition is not really temperature sensitive in the way that the clotting enzyme (rennin or rennet) step can be.  Enzymes work faster as you warm the milk but don't go above body temp since that's where they evolved to be optimium.  But milk clots at room temp , the enzyme just takes twice the time for every 10 degrees cooler the reaction is hld at.
