**Q: any other ingredients other than 'four'? any niacin, thiamine mononitrate, riboflavin, folic acid or enzymes?**
A: Flour is the only ingredient, that’s why I bought it. I have MTHFR and can’t have the additives ie. folic acid. I can’t eat store bought bread so I bake my own and have had great results with this flour.

**Q: Is this bromated?**
A: I do not believe so. According to package, it's 100% stone ground organic white bread flour.I would not have purchased if it contained Sodium Bromate! **Q: Has anyone used this flour to make brioche, croissants, or baguettes? If yes, please state your results.**
A: I tried a 2lb sample bag which I got direct from the company - excellent customer service!  I wanted to see if my bagels would turn out better with this flour vs organic unbleached all purpose flour. And yes, the bagels rose better, had a better "chew" to them, and the dough was much easier to work with!  About to get the 25 lbs!!

A: It is white flour but not bleached.

First, pouring the flour into a permanent storage container showed NO bugs. The aroma from the flour is amazing! A deep lovely wheat smell with strong fruity notes. The fruit smell did not translate into cooked products, but the taste was amazing! I've been making Sourdough bread for over thirty years and this is the most amazing flour I have yet used. The description does not give the protein content, but the labeling does...it is 11.3% (3.4 g:30g), right in the middle for all purpose flour (generally considered to be 10-12% protein). The label shows this lot of flour is sourced in Canada.
