Worth it, but learn how to use it
This pan is superb. We have a gas cooktop, so the heat stops *IMMEDIATLY* when we turn off the hob. And the copper cools immediately, as well. It does not stay warm like a large heavy Le Creuset skillet. This makes the pan great for delicate foods like fish. I'm not sure I would like it as much on any of the electric cooktops because they have too much residual heat when you turn down the hob.This is not a cast-iron pan; it is not an anodized aluminum non-stick pan; it is not a carbon steel pan. Each of those materials works fabulously for their niche, and this copper pan works fabulously for its niche. We have all of these materials in our kitchen, and we use all of them where appropriate. Trying to rate one material over the other is like trying to comparing apples to zucchini squash. There's very little you can compare.This pan has a bonded stainless steel cooking surface. So it will cook like a stainless steel pan!!! If you don't know what you're doing everything is going to stick like crazy. If you'll go to YouTube and watch some videos about cooking on stainless steel pans you'll have no trouble. This pan will behave exactly like that. Trust me, the folks on YouTube don't have magic stainless steel, and Mauviel doesn't use junk stainless steel. And your kitchen is going to follow the same rules of cooking science as everyone else's on the planet. Stay in the accepted path and you'll be delighted; expect miracles and you'll be disappointed.

Love this pan - becomming an heirloom
I am revising my rating of this pan. I purchased it back in 2021 and gave it a good rating. After using it 3-years, I have to say that it has become one of my favorite pans. The heat responsiveness is very good, but only marginally better than the All-Clad d5 Stainless Steel but it has other features that I really appreciate. The pan is hefty but so well balanced it is a joy to cook with. The handle is in every way superior. It is long and strong enough that I can really manipulate the pan for serious cooking. It is cooler than the brass handles. The iron coating on the stainless steel will rust so be sure to oil it (and only it) after washing. As for cleaning, put some water in the pan, heat up, and any crud will lift right off the steal lining for easy hand washing in the sink. As for the copper, it polishes up easily and quickly with Wright's Copper Cream. Dry completely and put away. No it CANNOT go in the dish washer but it is copper! Why would you do that? The pan is so gorgeous it should be hung out on display when not in use. It also looks fantastic with my black Lodge cast iron skillets. I love it so much that I am saving up for a larger pan with lid (saute). My only complaint is Mauviel no longer makes pans with 2.5mm copper thickness. They have moved to the 2mm. Pity.

Accept NO substitute! Quality counts.
This is my second Mauviel pan - the first being the larger crepe pan, which I use to fry patties or make pancakes. These pans are exquisitely crafted, and the frying pan is thick enough to really deliver searing HEAT to whatever you want to braise or fry. Even more amzing, a simple soaking in soapy water for 20 min makes the pan a breeze to clean! I use Barkeeper's Friend (sparingly) on the inside and a special copper polish cleaner on the outside. The pans are GORGEOUS to look at, inspire me to use them, and will far outlast my own mortal life.

Good for one thing
I originally wrote a negative review. However, over the time we found this frying pan very convenient for cooking one particular type of meal - pan fried steaks. With the right recipe, they indeed come out very good, and high heat conductivity of this pan allows one to cook those in literally a couple of minutes. We do not use this frying pan for cooking anything else.

It’s a beautiful pan and at a great price
It’s a beautiful pan and at a great price. It was easy to clean after pan frying chicken breasts, so the stainless is top notch. The copper is thick and weighty, so it’s an appropriately heavy pan. I have other copper pans with cast iron handles that seem to fit better. The new handle stays very cool, but it looks like a molded plastic. I would prefer traditional cast iron handles.

Great heat control
Great pan! From a functionality standpoint I don’t cook everything in it but the heat control for delicate seafood is fantastic. Also does great with skin on chicken thighs and pork chops. I prefer my beef grilled but tried filet in it and it came out good although I probably won’t do it again. As researched, the main advantage is instant heat responsiveness. If you keep it polished up (kosher salt and lemon) it looks beautiful on the stove! Stainless cleans up with some elbow grease if it gets too hot. If you’re looking for an “easy” pan it’s better you pass.

Worth every penny! ONLY If you know how to uses stainless steel pan.
Great pan! heats up super fast and distributes heat evenly throughout the pan. As a person who loves to cook, this purchase was a great opportunity to level up my cooking skills.

Good pan but arrived previously used and scratched
I like the pan, it’s a sold 2.5 mm thick copper. What disappointed me was that it arrived with scuffs and scratches on the bottom exterior. It had obviously been used and returned by a previous customer. For the price point of this pan I expected a brand new purchase. I contacted the seller but no word yet (it’s been a month).
