I'm still waiting....My best educated guess is that it's a dark rye flour similar to Bob Red Mill's Whole Dark Rye. The color and taste are similar, but Arrowhead Mills' is not as finely ground as Bob Red Mill's. **Q: To the company: Is this flour unbleached and unbromated?** A: No, not that I am aware of. **Q: Are the bags recyclable?** A: I havn’t Bought this product but have bought oat flour from this company and believe they are recyclable. **Q: Is this 100% stone ground?** A: Probably not since the package doesn't say it is. Most stoneground grains will say it is on the package. I use this rye flour mixed with all-purpose as a feeding medium for my sourdough starter. If you want a stoneground rye flour I would suggest Hodgson Mill as an alternate. It really helps make our pizzas, focaccia and other breads taste even better. Rye flour adds depth to the flavor of all sorts of bread like baked goods. We usually substitute 1/4 or 1/2 cup of rye for regular flour but otherwise follow the recipe. Some rye flours add a lot of color to the end product, but Arrowhead doesn't do that, so it's our go-to rye. ### ⭐⭐⭐⭐⭐ Many uses. I've never been disappointed with this brand. The only thing I DO NOT like about this product is, the bag is hard to align up the seal to close the bag. It's a nice and sturdy bag/closure but a pain to align. Transferred to another container and problem solved. It's very good and maybe some people are too quick to blame a product when they don't know how to cook. If you do a search for a Rye Bread Recipe, you will see that about one forth or one third is Rye Flour and the rest is Plain Flour. You might need a little more water, and make sure the water isn't too hot or too cold. Use 3 teaspoons sugar or brown sugar or add some molasses.
