I love shepherd's pie, but let's face it, making one from scratch can take a little time and effort. Enter Colman's Shepherd's Pie Mix! This stuff makes a pretty decent shepherd's pie accessible to just about anyone. Think of it like McCormick's Sloppy Joe seasoning mix. Nothing particularly fancy, but it gets the job done and makes a really good, quick dinner. I use this quite often, and with a little doctoring up, it's surprisingly good! The gravy isn't quite what you'd get from a homemade, slow-cooked version, but for a quickie? It's a no-brainer! Just add some ground beef, a small can of peas and carrots, and top it off with mashed potatoes. You're good to go! Confession time: I've even cheated and used Bob Evans prepared mashed potatoes for the topping. Is it gourmet? Absolutely not! But you can throw the whole thing together in about 15 minutes that way. Sometimes convenience wins! This is the kind of hearty comfort food that hits the spot when the weather turns cold.
