Very sharp.
I rented an apartment in France this winter that had one of these knives in the utensil drawer. I used it to slice onions and tomatoes and it was awesome. The knife was dull to the touch but effortlessly cut through my items. The new knives I received are super sharp to the touch so obviously I was using a dull knife in France and it still was awesome. I think I will be very happy with this purchase.

Now my favorite knife
I was skeptical that it would end up just another knife in the drawer. Not so! This is now my favorite knife because it does what a knife is supposed to do: serve as a kitchen tool that makes work easier. It slices and dices like no other knife I have. When some people have a hammer, everything becomes a nail. In other words, they want one knife that will do every job in the kitchen. If that is what you are looking for, this knife isn't for you. This knife is for slicing and dicing. It is not a knife that I would use on tasks that require twisting or coring. It is ceramic ... not metal. It will break if used on glass or granite. When I have a task that requires me to cut on glass or granite, or a task that requires me to twist a knife, I turn to one of my metal knives. If I am going to smash garlic with the side of a knife, I would not reach for my ceramic knife because I understand that it will break. I would not use this knife to cut through meats that have bones. The bone might chip or damage the knife. I am content to use the right tools for jobs and do not mind switching between this knife and a metal knife if, in fact, the job calls for it. Also, I am careful not to throw the knife into the drawer with my metal knives ... it would probably chip the knife. The other day, I used this knife to finely mince fresh rosemary. It worked like a dream! It slices through tomatoes perfectly. It cut paper thin slices of tomatoes with perfect execution. I am a strong believer that you get what you pay for. There are cheap ceramic knives and there are expensive ceramic knives. I cannot make a statement about the cheaper ceramic knives because I've never tried one; however, I can speak about this knife and am very happy to have added it to my arsenal of kitchen tools. I highly recommend this knife. I believe this knife sets a high standard for ceramic knives. Update (January 29, 2012): Sadly, I must say this WAS my favorite knife. I used it to cut some meat and, not realizing there was a bone, the blade cracked into several pieces. I won't be replacing the knife.

Kyocera 3Piece Advanced ceramic knife set
Love these knives. Sharp and easy to use. But it is possible to break or chip them so treat them well.

These ceramic knives are the best ones in my kitchen
With this and a smaller ceramic knife I can cut vegetables and other foods with precision and care in ways that seem impossible with even very good quality metal knives. To my surprise, I have even found that the larger knife can be used for slicing home-made bread into very thin pieces. So far the knives have been durable, retained their sharpness and are easy to clean. I don't use them to cut very hard items, like bone, because I sense they can be fragile. And the user has to be very careful to keep fingers away from the blade because this knife will do the same thing to your hand that it will do to a tomato. There is no room for error without risk of serious injury. But it's a great knife and I have just given one to my daughter, who is a serious cook, as a holiday gift.

Excellent knives but break and chip easily
Love these Kyocera knives and have been buying them for many years. They are lightweight, easy to handle, and exceedingly sharp. They look great with lots of different handle color options. Cleaning is generally easy with minimal staining of the ceramic. But the downside is the blades can chip easily or even break easily compared to stainless steel knives. Yet, I keep replacing them.

Good for some food but not all
These knives are really god! But very dangerous! Not good for hard stuff.

KNIFE BLADES SNAP AND BREAK LIKE EGGSHELLS!
DO NOT BUY these knives - they snap and easily break just like EGGSHELLS! While they are lightweight and super sharp, they stain really easily and do not keep their pristine look after you start using them, very hard to clean and the white blades tend to absorb the discoloration of whatever you use them to cut up. The worst thing about them unfortunately is their EXTREME fragility - the knife blades break SO easily and the knife is useless because they are so fragile, the blades snap with normal/typical use. Not durable, these will break very soon after you get them, so sadly they are a complete waste of money and aren't made sturdy enough to be a true quality knife regardless of how amazingly sharp the blades are - the blades ARE the issue and do not hold up to being used like a knife should - instead the blade will snap or break and the knife is done after that.

Lightweight and sharp
Love the ceramic knives. Find them sharper and doesn’t dull so easily. The only thing is they can’t be used to pry or it can break esp. the tip.

Super sharp shredders
These are super sharp, lightweight and well balanced, they will slice through most things with ease - fruits, vegetables and fingers. I mean most things but there are things these knives are not recommended for use with, read the instructions in the box to know what not to chop. I've seen reviews where other buyers have complained that these knives are brittle. They probably are thinner than most knives on the market, let's just say they are not thick stainless steel. These blades are not made to be thrown into the sink or dishwasher, or once dry thrown in a cutlery drawer amongst other utensils. They will end up chipped or broken. Then you'll end up leaving a review saying they are brittle and useless. If you want to look after your knives then buy a set of hard knife protectors to slip them in. The knives stay sharp longer than stainless steel and don't cause foods, such as apples, to go brown when chopped. Don't ask me why though. I seen it on the internet and then tried it for myself, et voilà, a chopped apple that didn't go brown. On a serious note - these are top quality blades and if looked after properly they will last for many years.

Best ceramic knives, I used
Awesome knives. Most sharp knives that I ever used. I'm concerned about colour. My wife likes it and I have to use pink knives now. Guys, you can do other colours so that whole family can use it.
