What is the difference between an edge sheet and a flat sheet? In what circumstance would you prefer one over the other?

The ‘edge’ sheet simply has a small retaining wall edge. I use them for dehydrating liquids, like stocks or yogurt. Also useful if a fruit might seep as it’s drying - a lot less clean up!

Can you cut the sheets to fit?

Yes, they can be cut. They are 100% silicone so there will be no harm in cutting, there are no extra fillers or fibers inside that will come loose by cutting. You can resize to any dehydrator you have! Regards, Ben RawNori Healthy Living

Can the sheets fit the excalibur 2400?

These can be easily cut to fit the 2400 model. These sheets are 14" x 14" made especially to fit the 5 and 9 tray excalibur models.

What is the chemical smell? Is it dangerous? And how do you get rid of it?

My sheets did not have a strong chemical smell, but they did smell like silicone. I scrubbed them with baking soda and Dr.Bronners soap. I have used mine quite a bit and not had any problems.
