would the 32, 80, or 250 ohms be best suited for desktop gaming?

It will depend on your sound card's ability to drive the heavier load of the 80 or 250 ohm version. The higher the load, the more accurate your bass response and high end will be, so the 250 ohm will give the clearest "view" of where sounds are coming from, but only if your sound card can adequately drive them. If you are unsure, go with the 32 ohm, or pick up a headphone preamp that can drive the 250 ohm.

How is the bass on these phones ?

The DT 770's have a bit of bass. Bass tbh is better in the DT 990's but I prefer the 770's for the closed aspect. You can of course tweak the bass boost in the windows settings if you want more or less which is what I've done.

So I just got these today. And i gotta say the bass is horrendous. The low end is almost non existent, why is that?

If you're using a source that cannot properly drive 250ohm you will notice a lack of bass and extreme high end, and a general muddy sound all around. A decend headphone preamp will fix this issue if you're using a low powered source; otherwise, your pair may be defective. If you do not have a preamp, or don't want to use one, the 32ohm or 80ohm model might be a better fit and should be roughly the same price. What source are you using?

What headset would be best for a Note 20 Ultra?

The 32 ohm model would work best. 80 ohm is more for home based equipment (stereo receiver). 250 ohm is pretty much for recording studios or high output headphone amps. For a mobile device, the 32 ohm would be your best bet.
