why would people eat these if they are rocks??

It's called pica. It's not so much the taste they crave it's the texture and the feeling of eating it. It's usually due to a mineral or vitamin deficiency in the body. It can also be due to side effects from certain medications or illnesses. Trust me you wouldn't understand until you've experienced a pica craving it's very hard to explain. My grandma used to chew cornstarch or pieces of fresh tar from a freshly paved street. My sister would chew baking soda (never would swallow it though) due to her stomach acid deficiency. I would crave a texture that's similar to soaked and pressed floral styrofoam that they sell at Michael's Craft Store and the urge to chew pills. All of our cravings were due to certain medications. It sucks.

I don't care for a roasted flavor. Is this roasted?

It was just hard and crumbly. The after taste or flavor was more chemical, like processed dirt.

Why would anyone eat chalk? Health benefits?

Mostly women in other countries eat these edible clays. The salts and minerals in them satisfy cravings when they pregnant but some continue to eat them afterwards.
