We win every time. Very easy. I’m guessing we are doing something wrong?

It can swing from easy to impossible, based on the luck of the die rolls in some games. Without knowing everything you are doing or how many times you are playing, I can only speculate that it might be possible that you may not be adding new zombies at the beginning of EVERY players turn? (Long shot, but I have seen people miss this before.) Or are playing on the easier side of the board with more players than you should? (Easier movement for less players).

Is there an online manual for the missions&etc? my son went on holiday w/ his grandparents, and it was left at the hotel... i was told a week after

Are the Stickers reusable for future play through?

The stickers are not reusable, because they are not designed to be removed. As has been mentioned by others though, it is quite easy to play through the game at any envelope stage you would like to play again by turning things over and using the side from before you added the sticker. Each time you open an envelope you add something to Zombie Kidz Evolution, but there is nothing preventing you from playing the game with any combination of content you like.
