Does the 5 qt lid fit on the steamer insert also? Or do you have to use the steamer open.... which would defeat the purpose?

Can you use these pans and pots to deep fry in oil? Will it damage the coating?

You can deep fry without hurting the coating. I clean my pots and pans with warm soapy water after it cools down. The pots clean well.

Can I deep fry with these pans? If so how?

The same way you would with any pan deep enough. Just put enough oil in th pan, heat it to 350 degrees Fahrenheit, and then carefully add the food to be fried.

Is it necessary to treat the pans? First time using a metal spatula and my skillet is scratched.

To my knowledge, there are no “treatments” for a nonstick pan surface. I would not expect a simple scratch would be all that harmful to the future functionality of the cooking surface. However, I believe that it is not a good idea to use metal utensils in nonstick pans if you want to avoid scratching them. Metal utensils will even scratch stainless steel pans.
