Yes you can use oil I use oil everyday as a chef and have had this stone for over a year and it's sharpens all knifes in my kitchen

The question specifically regards sharpening, you can sharpen a straight razor with a 6000 grit stone. But you would need to follow that with a grit of 10,000 or more with leather strop which moves you into polishing the edge vs. sharpening.
