Yes, you can use them in the oven. But put the donut mold on a cookie sheet or tray.

Can these be used in air fryer?

They don't fit in my air fryer basket - but I don't see why not. Just make sure you don't exceed the maximum recommended heat setting and you should be fine.

Do they turn white when pinched?

Whatever color your dough is that's the color of the inside. If you use chocolate it is brown. If you use food coloring in the vanilla it will be the color of the food coloring. Just like baking cake.
