What are the dimensions of the sensor/probe??

Wire for probe is 6 ft long actual sensor tip is about 5/16 dia

When it reaches the set temp and comes on, does it go off in one degree?

Check the model with the manafacturer , they normally can be set to come on from 0.3 deg to as much as you like . Ours are set to o.3 . Dont forget that the reading although in 0.1 of a degree could still be inaccurate. It has a calibration function for you to change the display up or down if you can find the exact temp it is measuring

Is there a way to calibrate this thing? It is accurate at 70 deg F, but it says 175 when the actual is 200.

CA value range is -15 ~15 . Maybe the probe is in the wrong position. Please change the probe to another position and try to calibrate it. For example, the reading temperature (PV) is higher 3 degrees than the current temperature, please set CA= -3. The reading temperature is lower 2 degrees, than the current temperature, please set CA=2. If the problems still cannot solve,please feel free to contact us in Amazon.

I need a waterproof temp prob or thermowell. Do you have one?
