Will these work with 10-series? I've seen other similar products that apparently will. Curious if that will hold true for this pack as well.

The width of the corner bracket is 0.8", slightly less than 1", but it can be used on the 10 series, You can make comparisons according to your own needs.

can the nubs be removed so they can be used at right angles to the center channel?

Yes, I filed/sanded the nubs flush with the bracket to mount at a right angle.
