High in protein, good texture and flavor
These noodles have been amazing for my meal prep. I’ve been using them not as a protein replacement but as a way to bulk up meals without having to have tons of carbs and tons of protein shakes. My meal preps which include these noodles and a serving of protein are easily in the 40-70g of protein range. Easily helping me reach my goal of 100-160g a day. They don’t get soggy and soft even when sitting in the fridge after being cooked for 7 days. In fact they don’t seem to degrade in texture at all. They don’t taste like cardboard and between myself, my sister, and her boyfriend, we all love these noodles. While they are pricey if you look at it as a carb, I think of it as a carb that’s super high in protein and fiber while being low in carbs. Helping you maintain a low carb high protein diet. And because it’s protein, you feel full faster and stay full longer. All in all, it’s a staple of mine now.

Protein packed pasta alternative
I was really impressed with this edamame spaghetti! It’s such a great low carb, high protein alternative to regular pasta and fits perfectly into my healthy eating goals. The texture is firm, not mushy, and it holds up well with sauces whether it’s a simple marinara, stir-fry, or even just olive oil and garlic. I love that it’s gluten-free, vegan, and made with clean ingredients, so it feels good to eat while still being really satisfying. The protein content is amazing, and it keeps me full without the heavy feeling of traditional pasta. This has quickly become one of my go-to pantry staples for easy, healthy meals.

Fine. Taste is ok.
Well, it doesn’t taste like pasta, but of all the fake pasta I have used. This seems to be the best. It’s really good if you make a casserole with it or if you mix it with pasta to cut back on the carbs.

Low carb, versatile, and delicious - best of both worlds!
I love carbs but I am prediabetic so I need to watch what I eat. This edamame spaghetti gets it right. I cook these in boiling water for 4 minutes and it comes out with firm texture and consistency that is the closest to wheat pasta that I have ever tried. They used to sell this at Costco but Amazon is the only place where I can consistently find this now and I can't live without it. You can use this also as a soba noodle substitute and it goes well with soba dipping sauce. I know this is more expensive compared to wheat pasta but it is worth it. The package can last for several servings but it tastes so good that you want more. It does have a slight green color because it is made from soybeans but it goes well with just about anything you usually cook with wheat pasta. It does not get soggy quickly when in pasta sauce. If you need a pasta alternative that is diabetic friendly, this will be your go to product.

Best Pasta on Earth
I luv this stuff. It's my all-time favorite pasta. I luv Edamame Beans, & since the only ingredient in this pasta is Organic Edamame flour, the Edamame flavor is prominent. Also the protein content is higher & the carb content is lower than in wheat pasta, which makes this one healthier. This Edamame spaghetti cooks quickly, & it's very chewey, never mushy [not even when overcooked]. So if you like al-Dente pasta with the taste of Edamame Beans, this is for you. It's more expensive than super-market pasta, but I think it's worth every penny. I'm surprised at all the negative reviews of this pasta, but i understand that everyone likes different things. For the people who don't like this Edamame spaghetti, I'd suggest that you try MIXING IT with the plain white or whole wheat spaghetti that you like. That way maybe it will taste more familiar & the unusual taste & texture of Edamame spaghetti will be less noticable to you. Good Luck & Good Eats! Not Bad, Just Different
I've been cooking wheat pasta for over 60 years (and eating it longer than that), so I'm a long-time wheat pasta lover!! But due to heath issues, I'm trying to cut back on carbs for me and hubby. We're not pure keto, just looking to cut out large amounts of carbs. So my method is to use half regular pasta, half lower carb supplement. I was skeptical about this product, but decided to give it a try, and it worked for us, no weird taste or texture. However, it should be noted that I had to adjust cooking. In a response to one of the questions above about cooking, I said that, ultimately, I cooked it about 15 minutes (bring to boil, then simmer) before it got the right texture (we like our pasta softer). Fortunately, it did NOT get rubbery or fall apart, as some others have reported. Cook on simmer, not hard boil, and it may heelp hold together better. I added some butter and garlic and it actually tasted pretty good, both with sauce and with just plain cheese. I've always said that a good sauce will cover a lot of sins! Does it taste like regular pasta? No, it does not, but nothing will substitute perfectly. So you need to go into it with an open mind for differences.

Great wheat pasta alternative—I have to cook them much longer than the instructions say.
Love these noodles as a wheat pasta alternative, and I agree with all the other positive reviews. I write mainly to say that the cooking instructions (boil 3-5 minutes) for me are way off. I find I have to watch them very closely starting at about 8 minutes but usually boil mine for 12 minutes and sometimes even longer. 3-5 minutes results in a rubbery weird texture that other reviewers have noted. My wife is making shrimp Alfredo tonight. She’ll cook her wheat fettuccine noodles for her, and I’ll boil these for me. These aren’t as yummy as regular pasta noodles, but they’re the best low carb substitute I’ve ever found, and I’ve tried lots. I will give the One Bean version a shot—they’re less expensive—I’ll see if they’re as good.

Quality
This is the worst stuff you will ever put in your mouth if I could give zero stars I would you could actually use this as fishing line says cook 20 minutes cut it up with scissors. I left one long and it held a fork and a pair of scissors that I could tie onto it like a piece of yarn you could not chew this stuff would be better off for fishing line. Do not buy it. Nasty nasty
