Will this gadget slice tomatoes

No it wouldn’t be suitable for tomatoes. I use a mandolin for tomatoes

I guess so I also slice mushrooms but you have to have the grain of the mushroom in the correct position trial and error.

How do you switch between slicing and cutting into chunks?

there are two slices rings for chunks lift both slicers up and then just use the bottom slicer ,for slicing leave the bottom slicer down and just use the top one
