If a kitchen tool can be loved, I love this one! With an optional oval-shaped plastic bowl, it is the salad-maker supreme - not just effective and speedy but exhilarating to use. The bold red color helps, but performance is what I’m talking about. Convenience is great too. This design combines the advantages of on-board and separate housing of tools by having the tool case attach to the underside of the body. Then everything just fits in the bowl. True, this unit can’t manage crinkle or waffle cuts because the V-blade isn’t interchangeable, but I didn’t mind buying another small Borner mandoline for that special purpose - not expensive and really just as convenient as changing blades. Strange to say, my main machine has a production flaw. Molded-in graphics indicate that the thick-slicing julienne blade can make square dices. Unlike the thin-slicing julienne blade, however, the thick-slicer won’t adjust to the indicated dicing position (so, no dice!). I have heard of Borner introducing an updated model that won’t disappoint in that way but still have all the old virtues. Mine is from 2013. Oh, well. Lots of little machines can dice vegetables! UPDATE: How amazing! - after four years of thinking that my large-julienne cutter wouldn’t and couldn’t make diced vegetables, I have stumbled on how to make it work. In case anyone else needs help, here’s how: you know that you want to move the julienne assembly upward and inward toward the V-blades, according to the molded index point for dicing. But you must start (counter-intuitively) by pushing firmly DOWNWARD on its opposite end (nearest the handle, farthest from the blades); this allows a small, hidden plastic pin to move down and underneath a barrier and onto a plastic ramp that guides the whole assembly exactly to where it needs to go. What results is the promised dicing action.

A wonderful kitchen tool that will last you a lifetime.
I bought the V-1001 model in March of 2009, and still have it since I also bough the waffle cutting blade for it. I bought this V-7000 model because of the available thickness options. The V-1001 has the same blades as this one, but only one thickness is available for each of the julienne blades, and 2 thickness are available for slicing by turning the plate one way or the other. On the V-7000 model, you can choose between 4 thicknesses for slicing and the julienne blades. I bought this mandoline In July of 2012 five years ago, and so far, I have had no problems with it. Yes, you do have to make sure that it is clicked into the thickness you choose, but this hasn't been a problem for me. I tend to use this mandoline more than the V-1001 because of the thickness choices. After 5 years of use, the blades are as sharp as they were when it was new, and I have not had any parts break off of it. I also like that the part that stays in it for slicing closes up so that you can't get cut on the blade. I do only hand wash it which is simply slishing it in soapy water and rinsing it. I towel dry the blades and as much of the base as I can, and then let the rest air dry. Granted, I don't use it for all cutting jobs since just using a knife makes more sense and takes less time depending on the job. I usually use the mandoline when I have a lot to slice or process. This is a very useful tool that will last you a lifetime unless you decide to buy a new model with more options.

Nice mandoline
Replaced an old mandoline that was purchased at a fair, you know the "chopper 2000." Like this much better as it just does an over all better job. Easy to use, easy to clean, and cuts well. This thing is SHARP, so use the "handle" to hold the item as you slide it through. Failure to do so can be bad, trust me. You'll be slicing more than the veggies. It has different thickness settings, which is great. The thinnest setting is a little too thin for anything I have used it for. I tried it for dehydrated apples and they were too paper thin. Love this for apple and potatoe slices.

Sharp blades, durable, one of the better ones I've used
This is not an expensive, professional chef model, but I am a home cook that doesn't need the latest and greatest version of every kitchen gadge. I just need dependable products that do what they are supposed to, that last, and that make cooking easier and fun. That is exactly what I get with the Swissmar Borner V slicer. I am very pleased with the quality of this mandolin. The blades are very sharp as advertised. I've had no problem slicing anything from potatoes to celery, eggplant to hard boiled eggs. The thickness is adjustable from thick down to nearly paper thin by simply sliding the knob on the outer edge of the mandolin and adjusting the blade plate to the proper position. Very easy to do. Like all mandolins, you have to use some elbow grease to slice the food, but this brand is so sharp that it is much easier and smoother to use. I appreciate the safety guard for the blade slicer when not in use and the hard plastic container for the menacing-looking julienne blades. Being able to store them straight into that container when still wet to let them drip dry while still being protected is awesome. The handle is thick and has ridges which makes it easy to grip. The bottom grips the counter and cutting board much better than other brands I've tried. The safety food holder is better than most. The prongs that grasp the food are long and the recessed cap area deep so you really get a good grip on the food you are slicing. But it is small by necessity to fit the width of the mandolin, so some items just don't fit. Use safety gloves always! I'm able to make a great chop or mince of my vegetables once I got the hang of the technique using the julienne blades. It is so much faster and easier than using a knife, and my eyes are thankful for less time exposed to onion fumes! My only complaint is with the width of the julienne blades. The are great for shreds and thin sticks, but the widest width slices potatoes the size of shoe string fries. I had hoped to use this to cut at least medium french fries, but there's no way. If they had included a wider-spaced blade, even for a few dollars more, I would have given it 5 stars. I always wear a safety glove when using a mandolin. A must have for an everyday cook
Great mandoline. Almost perfect. Ordered it as a replacement for my old Zyliss (they look almost identical). Pros: sharp, gets the job done, the guard is a great addition and the ability to dice is awesome! Great safety feature that allows to elevate runway until blade is safely covered. Having the straight cutting piece with three setting saves space, which is great. I wish they also added the same feature to the other two blade pieces. Cons: Wish it was easier to attach the back for storage. It is quiet cumbersome still; and I wish the company, instead of leaving a lot of cavities in the back came up with a solid design (they could still engineer it the same way, but then make a plastic cover for open pieces), so it would be easier to clean and gunk would not collect there over time. I wish there was a piece to cut bigger fries than what they have now, although it still works fine. Other than that, love it--beautiful peace of equipment for someone who cooks daily, like I do. I also have a julienner by them, works great, although too light and plasticy, or you can order the grater that has the julienner and a couple of other settings--also by the same company.

Be careful with this product - overrated
I want to share my experience with this slicer. I have done a lot of research and finally settled on the Borner V Power. The best reviews I have seen though were for the Borner Pro mandoline. I should have purchased that one instead. It's too late now. It appears to be out of stock. I got the one with the button on the side thinking is easy to switch between settings. That is not working very well. The biggest problem I had (and the main reason I returned this product and gave just 1 star) is that the button on the side does not hold in place securely the blades. Very little pressure on the top side of the blade kicks the blade out of position. This is especially true for the 2 julienne blades. I have tried several times. I read the instructions to make sure I placed it in the correct position before using. It does not have a snap or click sound to tell you when the blade is secure. Most vegetables (carrots, potatoes, cucumbers) are pretty hard and some pressure needs to be applied to get the slicing done. My blades came out. Almost cut myself. This is not safe. The previous models seem to have sturdier design that locks in the blade. Pros - very sharp, good slicer on the regular blade. Cons - flimsy, hard to achieve dicing, julienne blades come out of position easily. Dicing doesn't really work very well and tried it with tomatoes.
